A vibrant and zesty homemade tomatillo green sauce that brings fresh flavors to any dish, perfect for tacos, burritos, or just with tortilla chips.
Ingredients

- 9 medium tomatillos
- 1 small yellow or white onion
- 1 to 2 serrano or jalapeño peppers
- 4 garlic cloves
- 2 tablespoons avocado oil
- 2 tablespoons fresh lime juice
- ½ cup chopped fresh cilantro
- 1¼ teaspoons sea salt
- Tortilla chips for serving
Instructions
- Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Remove the husks from the tomatillos, rinse, and pat dry. Slice the onion and peppers, then place everything on the baking sheet.
- Drizzle with avocado oil and sprinkle with sea salt. Toss to coat thoroughly. Wrap the garlic cloves in foil with a drizzle of oil and place them on the sheet.
- Roast for 15 to 20 minutes until the tomatillos are juicy and slightly browned.
- Carefully unwrap the garlic and remove the skins. Remove stems from the peppers. In a food processor, combine the roasted tomatillos, onion, peppers, garlic, avocado oil, lime juice, cilantro, and salt. Process until smooth.
- Taste the green sauce and adjust seasoning if necessary.
Notes
Store leftovers in the fridge for up to five days or freeze for up to three months. For a spicier sauce, add more jalapeño or serrano peppers.
