Description

A delightful homemade strawberry cake that bursts with fresh flavors and is topped with a creamy strawberry frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, pureed
  • 2 cups powdered sugar
  • ½ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 tablespoons cream or milk
  • Fresh strawberries for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, beat together flour, sugar, softened butter, milk, eggs, baking powder, salt, vanilla extract, and strawberry puree until well combined.
  3. Pour the batter evenly between the prepared pans and smooth the tops with a spatula.
  4. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  6. For the frosting, cream the softened butter and powdered sugar together until smooth. Add vanilla extract and enough cream or milk to reach desired consistency.
  7. Once the cakes are completely cool, place one layer on a serving plate, frost the top, and add the second layer. Frost the top and sides of the cake.
  8. Decorate with fresh strawberries and serve.

Ensure your butter is softened properly for the best texture. Store leftovers in the fridge for up to 3-4 days.
