Description

Ingredients

  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Combine the diced peaches, sugar, and lemon juice in a pot. Let sit for about 10 minutes to macerate.
  2. Place the pot over medium heat, stirring frequently until it comes to a boil.
  3. Lower the heat and maintain a simmer, allowing to thicken for about 15-20 minutes.
  4. Stir in the vanilla extract and cook for another 2 minutes.
  5. Remove from heat and pour into sterilized jars. Cool completely before sealing.

Notes

Use ripe, fragrant peaches for the best flavor. Homemade vanilla extract enhances the taste significantly.
