- 4 ripe peaches, diced
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Combine the diced peaches, sugar, and lemon juice in a pot. Let sit for about 10 minutes to macerate.
- Place the pot over medium heat, stirring frequently until it comes to a boil.
- Lower the heat and maintain a simmer, allowing to thicken for about 15-20 minutes.
- Stir in the vanilla extract and cook for another 2 minutes.
- Remove from heat and pour into sterilized jars. Cool completely before sealing.
Notes
Use ripe, fragrant peaches for the best flavor. Homemade vanilla extract enhances the taste significantly.
