Description

Delicious and customizable shrimp foil packets that infuse simple ingredients with rich flavors, perfect for busy nights or family gatherings.


Ingredients

  • 1.25 lb shrimp (large, deveined, and shell-on)
  • 2 ears fresh corn (shucked)
  • 0.6 lb andouille sausage (sliced)
  • 1 lb baby red potatoes (halved)
  • 4 tbsp Old Bay seasoning
  • 1.5 tbsp fresh garlic (minced)
  • 1 whole lemon (juiced)
  • 3 tbsp butter (melted)
  • 1/2 tsp smoked paprika
  • Salt and pepper (to taste)
  • 3 tbsp butter (for sauce and garnish, browned)
  • 1/2 cup parsley (chopped)
  • 1 lemon (for garnish, wedges or slices)

Instructions

  1. Prepare all ingredients: halve baby red potatoes, shuck corn, and slice sausage.
  2. Boil potatoes for 10 minutes until starting to soften.
  3. Combine shrimp, sausage, potatoes, corn, garlic, lemon juice, and melted butter in a bowl with seasoning mix.
  4. Tear off four large sheets of aluminum foil and divide the mixture among them.
  5. Seal the packets tightly and place on a baking sheet.
  6. Preheat oven to 400°F (200°C) and bake for 15-20 minutes until shrimp are pink and potatoes tender.
  7. Optional: Grill for 8-10 minutes per side if preferred.
  8. Drizzle with browned butter, garnish with parsley and lemon juice before serving.

Notes

Ensure the foil packets are sealed tightly to keep in the steam. Don’t overcrowd the packets.
