- 1.25 lb shrimp (large, deveined, and shell-on)
- 2 ears fresh corn (shucked)
- 0.6 lb andouille sausage (sliced)
- 1 lb baby red potatoes (halved)
- 4 tbsp Old Bay seasoning
- 1.5 tbsp fresh garlic (minced)
- 1 whole lemon (juiced)
- 3 tbsp butter (melted)
- 1/2 tsp smoked paprika
- Salt and pepper (to taste)
- 3 tbsp butter (for sauce and garnish, browned)
- 1/2 cup parsley (chopped)
- 1 lemon (for garnish, wedges or slices)
Instructions
- Prepare all ingredients: halve baby red potatoes, shuck corn, and slice sausage.
- Boil potatoes for 10 minutes until starting to soften.
- Combine shrimp, sausage, potatoes, corn, garlic, lemon juice, and melted butter in a bowl with seasoning mix.
- Tear off four large sheets of aluminum foil and divide the mixture among them.
- Seal the packets tightly and place on a baking sheet.
- Preheat oven to 400°F (200°C) and bake for 15-20 minutes until shrimp are pink and potatoes tender.
- Optional: Grill for 8-10 minutes per side if preferred.
- Drizzle with browned butter, garnish with parsley and lemon juice before serving.
Notes
Ensure the foil packets are sealed tightly to keep in the steam. Don’t overcrowd the packets.
