Ingredients

  • 1/4 cup honey or maple syrup
  • 1/2 cup nuts (e.g., almonds or walnuts)
  • 1/4 cup seeds (e.g., chia or sunflower seeds)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, mix together the rolled oats, chopped nuts, seeds, and salt.
  3. In a small saucepan, heat the peanut butter, honey (or maple syrup), and vanilla extract over low heat for 2-3 minutes until melted and combined.
  4. Pour the peanut butter mixture over the dry ingredients and mix until everything is nicely coated.
  5. Spread the mixture onto the prepared baking sheet evenly.
  6. Bake for 15-20 minutes, stirring halfway through until golden brown.
