Ingredients
1.5 cups heavy cream
1.5 cups whole milk
2/3 cup granulated sugar
1/8 teaspoon kosher salt
2 teaspoons vanilla extract
2 cups fresh ripe peaches, peeled and diced
1/2 cup granulated sugar
1 tablespoon lemon juice
Instructions
- Combine peaches with 1/2 cup sugar in a bowl. Let macerate for 30 minutes, then mash slightly with a fork.
- In a separate bowl, whisk together remaining 1 cup sugar, cream, milk, lemon juice, vanilla, almond extract (if using), and salt until sugar dissolves.
- Stir in peaches with their juices. Cover and refrigerate for at least 2 hours or overnight.
- Pour mixture into ice cream maker and churn according to manufacturer’s instructions (about 25-30 minutes).
- Transfer to an airtight container and freeze for at least 4 hours before serving.
Notes
- For smoother texture, puree half the peaches before adding.
- Add 1/4 tsp cinnamon for a spiced variation.
- If peaches aren’t sweet enough, increase sugar by 1/4 cup.
- For dairy-free version, use full-fat coconut milk instead of cream/milk.
