Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together in a large bowl: 2 cups of flour, 1 cup of sugar, baking powder, salt, and 1 teaspoon of cinnamon until well combined.
  3. Combine in another bowl 1/2 cup melted butter, 1 cup milk, 2 large eggs, and 1 teaspoon vanilla extract. Stir until well mixed.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the diced peaches gently, being careful not to overmix.
  5. Mix together in a small bowl 1/2 cup brown sugar, 1/4 cup flour, rolled oats, 1 tablespoon butter, and 1 teaspoon cinnamon to create the streusel topping.
  6. Divide the muffin batter evenly among the muffin cups, then sprinkle the streusel topping generously over each muffin.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean and the tops are golden brown.
  8. Let cool slightly before enjoying. Serve warm or at room temperature for a delightful treat.

Notes

For the best flavor, use fresh, ripe peaches when in season. If using canned peaches, ensure they’re packed in juice or water, not syrup.
