Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together in a large bowl: 2 cups of flour, 1 cup of sugar, baking powder, salt, and 1 teaspoon of cinnamon until well combined.
- Combine in another bowl 1/2 cup melted butter, 1 cup milk, 2 large eggs, and 1 teaspoon vanilla extract. Stir until well mixed.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the diced peaches gently, being careful not to overmix.
- Mix together in a small bowl 1/2 cup brown sugar, 1/4 cup flour, rolled oats, 1 tablespoon butter, and 1 teaspoon cinnamon to create the streusel topping.
- Divide the muffin batter evenly among the muffin cups, then sprinkle the streusel topping generously over each muffin.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean and the tops are golden brown.
- Let cool slightly before enjoying. Serve warm or at room temperature for a delightful treat.
Notes
For the best flavor, use fresh, ripe peaches when in season. If using canned peaches, ensure they’re packed in juice or water, not syrup.
