- 4 cups whole milk
- 1/3 cup Redpath Golden Yellow Sugar, packed
- 1 piece vanilla bean, split lengthwise and seeds scraped (or 1 teaspoon vanilla extract)
- 1/8 teaspoon salt
- 75 grams unsweetened chocolate, finely chopped
- Whipped cream, for topping (optional)
- Marshmallows, for topping (optional)
- Cocoa powder, for dusting (optional)
Instructions
- In a medium pot, combine the whole milk, Redpath Golden Yellow Sugar, vanilla seeds and pod, and salt. Place over medium heat.
- Stir gently until the sugar dissolves and steam rises, about 5-7 minutes, ensuring the milk doesn’t boil.
- Finely chop the unsweetened chocolate and place it in a heatproof bowl.
- Once the milk is steaming, pour about 1 cup into the bowl with the chocolate. Allow it to sit for 1 minute, then stir until melted and silky.
- Stir another ladleful of warm milk into the melted chocolate, then whisk the entire mixture back into the pot.
- Carefully remove and discard the vanilla bean pod.
- Ladle the hot chocolate into mugs and top with whipped cream, marshmallows, or cocoa powder. Serve immediately.
Notes
Keep milk chilled and whipped cream cold until serving. The quality of chocolate greatly impacts the flavor.
