Ingredients
- Flour tortillas (whole wheat or gluten-free)
- Fresh large eggs
- Sharp cheddar, Monterey Jack, or pepper jack cheese
- Cooked sausage, bacon, or black beans
- Bell peppers, onions, and spinach (fresh or frozen)
- Salt, pepper, cumin, or paprika
Instructions
- Prepare Your Ingredients: Gather and chop the vegetables, scramble the eggs in a large bowl, and season.
- Cook the Filling: Sauté the veggies until translucent, cook your meat, and then add scrambled eggs until just set.
- Assemble the Burritos: Lay out your tortillas, add the egg mixture, cheese, fold the sides, and roll tightly.
- Wrap and Freeze: Wrap each burrito in parchment paper and then aluminum foil; place in a labeled freezer bag.
- Cooking from Frozen: To reheat, remove wrapping and microwave for 1-2 minutes or bake at 375°F for 25-30 minutes.
