Ingredients

  • Flour tortillas (whole wheat or gluten-free)
  • Fresh large eggs
  • Sharp cheddar, Monterey Jack, or pepper jack cheese
  • Cooked sausage, bacon, or black beans
  • Bell peppers, onions, and spinach (fresh or frozen)
  • Salt, pepper, cumin, or paprika

Instructions

  1. Prepare Your Ingredients: Gather and chop the vegetables, scramble the eggs in a large bowl, and season.
  2. Cook the Filling: Sauté the veggies until translucent, cook your meat, and then add scrambled eggs until just set.
  3. Assemble the Burritos: Lay out your tortillas, add the egg mixture, cheese, fold the sides, and roll tightly.
  4. Wrap and Freeze: Wrap each burrito in parchment paper and then aluminum foil; place in a labeled freezer bag.
