Ingredients

  • 12 oz unsweetened shredded coconut (about 3.5 cups)
  • 1 tsp vanilla extract (optional)
  • Pinch of sea salt (optional)

Instructions

  1. Place the shredded coconut in a food processor.
  2. Blend for about 3-5 minutes until it begins to clump together.
  3. Continue blending, stopping to scrape down the sides, until smooth (10-15 minutes).
  4. Pour the coconut butter into a clean glass jar.
  5. Seal with a lid and store for up to 2 weeks at room temperature or 1 month in the fridge.
