Description

A soft and fluffy cinnamon raisin bread that combines sweet raisins with warm cinnamon flavor, perfect for any occasion.


Ingredients

Scale
  • 1/2 cup warm water (about 110-115ºF)
  • 3/4 cup 2% milk (about 110-115ºF)
  • 1 packet instant yeast (or active dry yeast)
  • 2 tablespoons salted butter (softened)
  • 2 tablespoons granulated sugar
  • 3 1/3 cups bread flour (or all-purpose flour)
  • 1 1/4 teaspoons salt
  • 1 1/2 cups raisins (chopped)
  • 2 cups water (for soaking the raisins)
  • 3/4 cup powdered sugar
  • 3 tablespoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 large egg white (whisked)
  • 1 cup powdered sugar (for frosting)
  • 1 tablespoon salted butter (melted)
  • 1/2 teaspoon vanilla extract (for icing)
  • 24 tablespoons heavy cream (to desired consistency)

Instructions

  1. Prepare the yeast mixture by combining warm water and milk in a stand mixer bowl and adding the yeast. Let it sit for about 3 minutes.
  2. Add softened butter, sugar, flour, and salt into the bowl and mix.
  3. Knead the dough with the dough hook on medium speed for about 5-7 minutes.
  4. Let the dough rise in a greased bowl covered with a towel for about 30-45 minutes.
  5. Soak the chopped raisins in warm water for at least 30 minutes and then drain.
  6. Roll out the dough into a rectangle around 9”x18”.
  7. Mix powdered sugar, cinnamon, and vanilla for the filling. Brush egg white on the dough, sprinkle filling and drained raisins, then roll tightly.
  8. Place the rolled dough in a greased loaf pan, cover, and let it rise for another 30-40 minutes.
  9. Bake at 350ºF for 40-45 minutes until golden brown and hollow sounding when tapped.
  10. While cooling, prepare frosting by mixing powdered sugar, melted butter, vanilla, and heavy cream.
  11. Spread or drizzle frosting on top of the cooled bread before slicing.

Notes

This bread can be customized with nuts or alternative spices and stored tightly wrapped. Can be made vegan by substituting ingredients.
