Ingredients

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 1 tablespoon active dry yeast
- 3/4 cup warm milk
- 1/2 cup unsalted butter, softened
- 1/2 cup bittersweet chocolate, chopped
- 1 large egg (for egg wash)
Instructions
- Mix the Dough: In a large bowl, combine the flour, sugar, salt, and yeast. Add the warm milk and mix until a rough dough forms, about 2 minutes.
- Knead the Dough: Turn the dough out onto a floured surface and knead for about 5 minutes until smooth and elastic.
- Laminate with Butter: Roll the dough into a rectangle, spread softened butter over two-thirds, fold in a letter style, roll out again and repeat two more times.
- Chill the Dough: Wrap in plastic and chill in the refrigerator for at least 1 hour.
- Cut and Shape: Roll out the dough, cut into triangles, place chocolate at the base, and roll into croissant shapes.
- Let the Croissants Rise: Place on a baking sheet, and let them rise until doubled in size, about 1 hour.
- Bake: Preheat the oven to 375°F (190°C), brush with egg wash, and bake for 15-20 minutes until golden brown.
- Cool and Enjoy: Let cool slightly on a wire rack before serving.
Notes
Best enjoyed fresh out of the oven. Can be made a day ahead and stored in the refrigerator for overnight proofing before baking.
