  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 flaky butter pie crust

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium saucepan, combine cherries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat until bubbling and thickened (about 5-7 minutes).
  3. Remove from heat, stir in the butter until melted, and let it cool slightly.
  4. Roll out the pie crust and place in a 9-inch pie pan.
  5. Pour the cherry filling into the crust.
  6. Cover with the second crust, seal the edges, and cut slits for steam to escape.
