Delicious homemade berry turnovers packed with flavorful mixed berries and wrapped in flaky pastry.

- 1 batch rough puff pastry
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 egg (for egg wash)
- Pinch of salt
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the rough puff pastry until about 1/8 inch thick and cut into 4×4 inch squares.
- In a bowl, gently combine the mixed berries, sugar, cornstarch, vanilla extract, and a pinch of salt.
- Place a spoonful of the berry mixture in the center of each pastry square, being careful not to overfill.
- Fold the pastry over to form a triangle and crimp the edges with a fork.
- Brush the tops of each turnover with the beaten egg.
- Bake on a parchment-lined sheet for 20-25 minutes until golden brown.
- Let cool slightly before serving.
Notes
For extra flaky crust, keep butter and pastry chilled.
