Description

Delicious homemade berry turnovers packed with flavorful mixed berries and wrapped in flaky pastry.


Ingredients

Scale
  • 1 batch rough puff pastry
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • Pinch of salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the rough puff pastry until about 1/8 inch thick and cut into 4×4 inch squares.
  3. In a bowl, gently combine the mixed berries, sugar, cornstarch, vanilla extract, and a pinch of salt.
  4. Place a spoonful of the berry mixture in the center of each pastry square, being careful not to overfill.
  5. Fold the pastry over to form a triangle and crimp the edges with a fork.
  6. Brush the tops of each turnover with the beaten egg.
  7. Bake on a parchment-lined sheet for 20-25 minutes until golden brown.
  8. Let cool slightly before serving.

Notes

For extra flaky crust, keep butter and pastry chilled.
