Description
Herby Egyptian Cabbage Rolls are a delightful combination of tender cabbage leaves wrapped around a savory filling of rice, fresh herbs, and spices, perfect for family gatherings and cozy dinners.

- 2.5kg Flat Cabbage (or any other non-curly variety)
- 1 Tsp Cumin Seeds
- 1 Tsp Coriander Seeds
- 2 Cups Medium Grain Rice (preferably Jasmine)
- 3 Medium Onions, finely diced
- 400g Canned Tomatoes
- 200g Tomato Paste
- 160g Parsley (100g after chopping and trimming)
- 100g Dill (60g after chopping and trimming)
- 1/4 Cup Clarified Butter (or oil if making this vegan)
- 2 Tbsp Salt
- 2 Tsp Black Pepper
Instructions
- Clean the cabbage by removing any outer leaves that aren’t suitable for eating.
- Core the cabbage and peel the leaves by gently pushing each leaf from its stalk.
- Prepare boiling water with the trimmed parsley and dill stalks along with cumin and coriander seeds; boil for 3 minutes.
- Blanch 2-3 cabbage leaves in the boiling water for 2-3 minutes until soft and pliable. Stack them to cool.
- Trim and cut the cooled leaves into squares (approximately 8cm x 8cm).
- Rinse the rice thoroughly and drain.
- In a large bowl, combine diced onions with salt and pepper, then add rinsed rice.
- Incorporate the tomato paste and mix well, followed by herbs and canned tomatoes.
- Heat clarified butter and pour into the rice mixture; stir to combine.
- Lay a cabbage square on a clean work surface and place a teaspoon of filling on it. Roll it snugly. Trim excess leaf as needed.
- Layer scrap cabbage leaves at the bottom of a large pot, arrange cabbage rolls in a spiral in the pot.
- Cover with vegetable stock or water, just enough to barely cover the rolls, and bring to a boil over medium heat.
- Reduce heat to low and steam covered for about 30 minutes. Check for doneness and serve.
Notes
Fresh herbs can be substituted with dried, but the flavor will be noticeably different. These rolls can be prepped in advance and stored in the fridge for up to 3 days.
