Description

Delightful Italian-inspired chicken rolls filled with creamy herbed ricotta cheese, perfect for family dinners or special occasions.


Ingredients

  • 4 large boneless skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by slicing each breast horizontally to create a pocket and pound to about 1/2 inch thickness.
  3. Make the filling by combining ricotta, Parmesan, basil, parsley, lemon zest, garlic, salt, and pepper in a bowl.
  4. Stuff each chicken breast with approximately 1/4 cup of the ricotta mixture, roll tightly, and secure with toothpicks.
  5. Sear the rolls in an oven-safe skillet with olive oil and melted butter until golden brown, about 2 minutes per side.
  6. Bake in the oven for 20–25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for 5 minutes before removing toothpicks and slicing.

Notes

For best results, use high-quality organic chicken and fresh ricotta. These rolls can also be made ahead of time and frozen for later use.
