- 4 large boneless skinless chicken breasts
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh parsley
- 1 teaspoon lemon zest
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon melted butter
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the chicken by slicing each breast horizontally to create a pocket and pound to about 1/2 inch thickness.
- Make the filling by combining ricotta, Parmesan, basil, parsley, lemon zest, garlic, salt, and pepper in a bowl.
- Stuff each chicken breast with approximately 1/4 cup of the ricotta mixture, roll tightly, and secure with toothpicks.
- Sear the rolls in an oven-safe skillet with olive oil and melted butter until golden brown, about 2 minutes per side.
- Bake in the oven for 20–25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for 5 minutes before removing toothpicks and slicing.
Notes
For best results, use high-quality organic chicken and fresh ricotta. These rolls can also be made ahead of time and frozen for later use.
