Ingredients

- 1 bone-in pork rib roast (minimum 6 bones)
- 3 cloves garlic, minced
- 2 tbsp. fresh rosemary, chopped
- 3 tbsp. dijon mustard
- 1 1/2 tsp. coarse salt
- 1/2 tsp. freshly ground black pepper
Instructions
- Preheat your oven to 400º F (200º C).
- Rinse the pork under cold water and pat dry with paper towels.
- Score the fat in a criss-cross pattern.
- In a small bowl, combine garlic, rosemary, dijon mustard, salt, and pepper to create the rub.
- Rub the mixture evenly over the meat.
- Place the roast, fat side up, on a rack in a roasting pan with 1/2 inch of water.
- Roast for 20 minutes at 400º F.
- Reduce oven temperature to 350º F (175º C) and roast for 45 minutes to 1 hour.
- Let the pork rest for at least 20 minutes after cooking.
- Slice and serve the roast into individual chops.
Notes
For best results, let the pork marinate overnight and ensure quality ingredients are used.
