Ingredients

  • 1 bone-in pork rib roast (minimum 6 bones)
  • 3 cloves garlic, minced
  • 2 tbsp. fresh rosemary, chopped
  • 3 tbsp. dijon mustard
  • 1 1/2 tsp. coarse salt
  • 1/2 tsp. freshly ground black pepper

Instructions

  1. Preheat your oven to 400º F (200º C).
  2. Rinse the pork under cold water and pat dry with paper towels.
  3. Score the fat in a criss-cross pattern.
  4. In a small bowl, combine garlic, rosemary, dijon mustard, salt, and pepper to create the rub.
  5. Rub the mixture evenly over the meat.
  6. Place the roast, fat side up, on a rack in a roasting pan with 1/2 inch of water.
  7. Roast for 20 minutes at 400º F.
  8. Reduce oven temperature to 350º F (175º C) and roast for 45 minutes to 1 hour.
  9. Let the pork rest for at least 20 minutes after cooking.
  10. Slice and serve the roast into individual chops.

Notes

For best results, let the pork marinate overnight and ensure quality ingredients are used.
