Ingredients

  • 2 large eggs
  • 1/3 cup pumpkin puree
  • 3 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup almond flour
  • 1/4 cup tapioca starch
  • 1/4 cup hemp protein powder
  • 1 tsp baking powder
  • 1 tsp pumpkin spice
  • 1/4 tsp salt

Instructions

  1. Mix the Wet Ingredients: In a mixing bowl, combine the eggs, pumpkin puree, maple syrup, and vanilla extract. Whisk until smooth.
  2. Incorporate the Dry Ingredients: Add in almond flour, tapioca starch, hemp protein powder, baking powder, pumpkin spice, and salt. Whisk until fully combined.
  3. Prepare Your Pan: Preheat a frying pan or griddle over medium heat and grease lightly with oil.
  4. Cook the Pancakes: Pour 1/4 cup of batter onto the heated pan, cover, and cook until bubbles form on top (3-4 minutes). Flip and cook an additional 2-3 minutes.
  5. Repeat the Process: Continue until all batter is used. Keep pancakes warm in a low oven if needed.
  6. Serve and Enjoy: Serve hot with your favorite toppings.

Notes
