- 1 ½ cups cooked cannellini beans, drained and rinsed
- 2 tablespoons extra-virgin olive oil
- 2 garlic cloves, minced
- 3 tablespoons lemon juice
- 1 teaspoon capers
- Sea salt and freshly ground black pepper, to taste
- 8 slices of toasted WFM Seeduction® bread
- 4 butter lettuce leaves
- 3 heirloom tomatoes, sliced
- 2 avocados, sliced
- 8 fresh basil leaves
- Pinch of smoked paprika (optional)
- Sprinkle of hemp seeds (optional)
Instructions
- Prepare the White Bean Spread: In a blender, combine the cooked cannellini beans, olive oil, minced garlic, lemon juice, and capers. Blend until smooth and creamy—this should take about 1-2 minutes. Season with sea salt and pepper, then chill in the fridge.
- Assemble the Sandwiches: After toasting the bread, start with four slices. Spread a layer of your chilled white bean puree on these slices. Layer on the butter lettuce, followed by slices of heirloom tomatoes and avocados. Sprinkle with fresh basil leaves and add salt and pepper before topping with the remaining bread slices.
- Press down gently on the sandwiches to meld the flavors before cutting them diagonally. Serve immediately.
