  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 23 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Optional toppings: shredded cheese, sour cream, green onions, avocado slices, tortilla chips

Instructions

  1. Prep Your Ingredients: Dice the onion and bell pepper, and mince the garlic.
  2. Brown the Meat: In a large pot, heat oil and brown the ground beef (or turkey) for 8-10 minutes.
  3. Sauté the Vegetables: Add onion, bell pepper, and garlic; cook for 5-7 minutes.
  4. Build the Base: Stir in chili powder, cumin, paprika, cayenne pepper, salt, and pepper.
  5. Add the Tomatoes and Broth: Pour in diced tomatoes, tomato sauce, and beef broth.
  6. Let It Simmer: Bring to a gentle boil, then cover and simmer for 30 minutes.
  7. Add the Beans: Stir in kidney beans and pinto beans; heat through for another 10 minutes.
  8. Taste and Adjust: Taste the chili and adjust seasoning as necessary.
  9. Serve and Enjoy: Ladle into bowls and let everyone customize their toppings.
