Description

A refreshing and nutritious summer treat, these popsicles blend strawberries, pineapple, and coconut yogurt for a creamy delight.


Ingredients

  • 10 oz Frozen Strawberries (about 2 heaping cups)
  • 10 oz Frozen Pineapple (about 2 heaping cups)
  • 3 Small Cooked Beets, Cubed (170g)
  • 1/2 Cup Coconut Yogurt
  • 1/3 Cup Coconut Milk
  • 1 Tablespoon Lime Juice
  • 1 Tablespoon Raw Honey (optional)
  • Pinch of Salt

Instructions

  1. Blend all popsicle ingredients in a high-powered blender until smooth.
  2. Pour the mixture into a silicone popsicle mold using a funnel.
  3. Insert popsicle sticks into each slot and cover the mold.
  4. Freeze for at least 8 hours or overnight to set.
  5. Enjoy by carefully removing the popsicles from the molds.

Notes
