Description

A flavorful twist on traditional gyros, these chicken gyro bowls are marinated chicken served over a bed of rice or quinoa, topped with fresh vegetables and creamy tzatziki sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup cooked rice, quinoa, or your favorite grain
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or mint

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine olive oil, oregano, garlic powder, onion powder, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  2. Make the Tzatziki Sauce: Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill or mint, salt, and pepper until combined. Chill in the fridge.
  3. Cook the Chicken: Heat a skillet or grill to medium-high heat and cook the chicken for 6–8 minutes on each side or until it reaches an internal temperature of 165°F. Let rest before slicing.
  4. Assemble the Bowls: In each bowl, layer rice or quinoa, top with sliced chicken, cherry tomatoes, diced cucumber, red onion, and tzatziki. Garnish with fresh parsley.
  5. Serve and Enjoy! Serve immediately or store ingredients separately for meal prep.

Notes

Marinate chicken for maximum flavor and prepare tzatziki ahead of time for an enhanced taste.
