Description
A flavorful twist on traditional gyros, these chicken gyro bowls are marinated chicken served over a bed of rice or quinoa, topped with fresh vegetables and creamy tzatziki sauce.
Ingredients

- 1 lb boneless, skinless chicken thighs or breasts
- 2 tbsp olive oil
- 2 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup cooked rice, quinoa, or your favorite grain
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp fresh dill or mint
Instructions
- Marinate the Chicken: In a mixing bowl, combine olive oil, oregano, garlic powder, onion powder, salt, and pepper. Add chicken and marinate for at least 30 minutes.
- Make the Tzatziki Sauce: Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill or mint, salt, and pepper until combined. Chill in the fridge.
- Cook the Chicken: Heat a skillet or grill to medium-high heat and cook the chicken for 6–8 minutes on each side or until it reaches an internal temperature of 165°F. Let rest before slicing.
- Assemble the Bowls: In each bowl, layer rice or quinoa, top with sliced chicken, cherry tomatoes, diced cucumber, red onion, and tzatziki. Garnish with fresh parsley.
- Serve and Enjoy! Serve immediately or store ingredients separately for meal prep.
Notes
Marinate chicken for maximum flavor and prepare tzatziki ahead of time for an enhanced taste.
