Ingredients

  • 2 large cucumbers
  • 4 slices of bacon
  • 1 small red onion, thinly sliced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon fresh dill

Instructions

  1. Slice the cucumbers and onion into thin rounds.
  2. Cook the bacon in a medium skillet until crispy.
  3. Drain the bacon on paper towels and reserve some bacon fat.
  4. Prepare the dressing by whisking together vinegar, oil, reserved fat, salt, and pepper.
  5. Combine sliced cucumbers and onion with the dressing.
  6. Finish by adding crumbled bacon and fresh dill, then toss gently.
  7. Chill the salad in the refrigerator for at least 30 minutes before serving.
