Instructions
- Prepare molds: Place your popsicle molds on a baking sheet to provide a sturdy, level surface. Insert the popsicle sticks into each mold.
- Make the filling: Combine all the ice cream filling ingredients in your blender. Start blending at low speed, gradually increasing to medium. Blend until well mixed and smooth.
- Fill the molds: Pour the delightful ice cream filling into your prepared molds, ensuring they’re filled to the brim.
- Freeze: Place the filled molds in the freezer for at least 240 minutes. You’ll know they are ready when they feel solid to the touch!
- Prepare the chocolate coating: Once the bars are frozen, melt the dark chocolate chips and coconut oil in a microwave-safe bowl, heating in 20-30 second intervals until smooth.
- Dip and decorate: Carefully remove the ice cream bars from their molds. Dip each bar into the melted chocolate, ensuring even coverage. Place them on a parchment-lined baking sheet to set.
- Store and enjoy: Store the finished ice cream bars in a sealed bag in the freezer for up to 30 days.
