Ingredients

  • 1 cup mashed sweet potato
  • 2 eggs or flax eggs
  • 3 tablespoons honey or maple syrup
  • 2 teaspoons vanilla extract
  • 3 tablespoons melted coconut oil
  • 2 ½ cups oat flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon sea salt
  • ⅓ cup chocolate chips + extra for sprinkling

Instructions

  1. Preheat your oven to 350F/180C.
  2. Prepare a 9×5 inch loaf pan by lining it with parchment paper.
  3. Mix the wet ingredients: mash sweet potato, then add eggs, honey (or maple syrup), vanilla, and melted coconut oil; stir until creamy.
  4. Add the dry ingredients: mix in oat flour, baking powder, cinnamon, and sea salt until just combined.
  5. Fold in the chocolate chips gently.
  6. Bake the batter in the loaf pan, sprinkling extra chocolate chips on top, for 45-50 minutes.
  7. Cool the bread in the pan for 10 minutes before transferring it to a wire rack to cool completely.
