- 2 eggs or flax eggs
- 3 tablespoons honey or maple syrup
- 2 teaspoons vanilla extract
- 3 tablespoons melted coconut oil
- 2 ½ cups oat flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon sea salt
- ⅓ cup chocolate chips + extra for sprinkling
Instructions
- Preheat your oven to 350F/180C.
- Prepare a 9×5 inch loaf pan by lining it with parchment paper.
- Mix the wet ingredients: mash sweet potato, then add eggs, honey (or maple syrup), vanilla, and melted coconut oil; stir until creamy.
- Add the dry ingredients: mix in oat flour, baking powder, cinnamon, and sea salt until just combined.
- Fold in the chocolate chips gently.
- Bake the batter in the loaf pan, sprinkling extra chocolate chips on top, for 45-50 minutes.
- Cool the bread in the pan for 10 minutes before transferring it to a wire rack to cool completely.
