- 2 cups cauliflower rice
- 1 cup cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup chicken broth
- 1/2 cup onion, diced
- 1 clove garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the diced onion and minced garlic in olive oil until softened, about 4-5 minutes.
- Combine cauliflower rice, chicken, broccoli, and sautéed garlic and onions in a large bowl.
- Pour in chicken broth, season with salt and pepper, and stir to combine.
- Transfer the mixture into a greased casserole dish, spreading it evenly.
- Top with shredded cheddar cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Let cool for a few minutes before serving.
