Description

A comforting yet guilt-free casserole made with chicken, cauliflower rice, and broccoli, topped with cheddar cheese.


Ingredients

  • 2 cups cauliflower rice
  • 1 cup cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup chicken broth
  • 1/2 cup onion, diced
  • 1 clove garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the diced onion and minced garlic in olive oil until softened, about 4-5 minutes.
  3. Combine cauliflower rice, chicken, broccoli, and sautéed garlic and onions in a large bowl.
  4. Pour in chicken broth, season with salt and pepper, and stir to combine.
  5. Transfer the mixture into a greased casserole dish, spreading it evenly.
  6. Top with shredded cheddar cheese.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.
