Description

A refreshing salad featuring sweet, grated carrots and juicy orange segments, drizzled with a tangy dressing.


Ingredients

Scale
  • 2 large carrots, grated
  • 1 large orange, segmented
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. In a large mixing bowl, add 2 large grated carrots.
  2. Peel and segment 1 large orange and add to the bowl.
  3. In a small bowl, whisk together 1 tablespoon olive oil, 1 tablespoon lemon juice, and a pinch of salt and pepper until combined.
  4. Pour the dressing over the carrot and orange mixture and toss gently to combine.
  5. Garnish with fresh parsley if desired and let it chill in the refrigerator for 15-30 minutes before serving.

Notes

This salad is best enjoyed fresh but can be stored in an airtight container for up to 3 days.
