- 2 large carrots, grated
- 1 large orange, segmented
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- In a large mixing bowl, add 2 large grated carrots.
- Peel and segment 1 large orange and add to the bowl.
- In a small bowl, whisk together 1 tablespoon olive oil, 1 tablespoon lemon juice, and a pinch of salt and pepper until combined.
- Pour the dressing over the carrot and orange mixture and toss gently to combine.
- Garnish with fresh parsley if desired and let it chill in the refrigerator for 15-30 minutes before serving.
