Instructions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Mix together the oat flour, rolled oats, cinnamon, baking soda, and a pinch of salt in a large bowl.
- Add the finely grated carrots and chocolate chips, folding gently to coat.
- Blend the melted coconut oil, honey (or maple syrup), and egg in a separate bowl.
- Combine the wet mixture with the dry ingredients, mixing until no dry spots remain.
- Shape the dough into approximately 14 cookies, spacing them at least one inch apart.
- Bake for about 20-22 minutes until golden brown.
- Cool for a few minutes on the baking sheet, then transfer to a wire rack.
Notes
For an extra chewy texture, let the dough sit for about 10 minutes before shaping into cookies.
