Ingredients

  • 1/2 cup chocolate chips
  • 1 1/2 cups rolled oats
  • 1 cup oat flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 egg
  • 1/4 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking soda
  • A pinch of sea salt

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Mix together the oat flour, rolled oats, cinnamon, baking soda, and a pinch of salt in a large bowl.
  3. Add the finely grated carrots and chocolate chips, folding gently to coat.
  4. Blend the melted coconut oil, honey (or maple syrup), and egg in a separate bowl.
  5. Combine the wet mixture with the dry ingredients, mixing until no dry spots remain.
  6. Shape the dough into approximately 14 cookies, spacing them at least one inch apart.
  7. Bake for about 20-22 minutes until golden brown.
  8. Cool for a few minutes on the baking sheet, then transfer to a wire rack.

Notes

For an extra chewy texture, let the dough sit for about 10 minutes before shaping into cookies.
