Description
A wholesome banana bread made without added sugar, perfect for breakfast or a healthy snack.
Ingredients

- 2 cups blanched almond flour (180g)
- 1/2 cup tapioca flour (63g)
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1 cup mashed banana (245g)
- 3 large eggs
- 1 Tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 cup fresh blueberries
- 1/3 cup walnut halves, chopped
Instructions
- Preheat oven to 350°F (175°C).
- Prepare a lined 8″ x 4″ baking pan.
- Mix dry ingredients: almond flour, tapioca flour, baking soda, and salt.
- Combine wet ingredients: mashed banana, eggs, lemon juice, and vanilla extract.
- Combine wet and dry mixtures until just combined.
- Fold in blueberries and chopped walnuts.
- Pour batter into the baking pan and top with extra blueberries and walnuts.
- Bake for 45-50 minutes until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then on a wire rack.
- Store leftovers in the fridge.
Notes
Use overripe bananas for maximum sweetness. Store in an airtight container for up to 5 days.
