Description

A wholesome banana bread made without added sugar, perfect for breakfast or a healthy snack.


Ingredients

Scale
  • 2 cups blanched almond flour (180g)
  • 1/2 cup tapioca flour (63g)
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup mashed banana (245g)
  • 3 large eggs
  • 1 Tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup fresh blueberries
  • 1/3 cup walnut halves, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare a lined 8″ x 4″ baking pan.
  3. Mix dry ingredients: almond flour, tapioca flour, baking soda, and salt.
  4. Combine wet ingredients: mashed banana, eggs, lemon juice, and vanilla extract.
  5. Combine wet and dry mixtures until just combined.
  6. Fold in blueberries and chopped walnuts.
  7. Pour batter into the baking pan and top with extra blueberries and walnuts.
  8. Bake for 45-50 minutes until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes, then on a wire rack.
  10. Store leftovers in the fridge.

Notes

Use overripe bananas for maximum sweetness. Store in an airtight container for up to 5 days.
