- 1 3/4 cups unsweetened almond milk
- 2 large eggs
- 1/3 cup pure maple syrup
- 1/4 cup melted butter or coconut oil
- 1/4 cup unsweetened applesauce
- 3 cups old-fashioned rolled oats

- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/4 teaspoon salt
- 1 1/2 cups finely chopped apple
- Optional: 1/4 cup chopped walnuts or pecans
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In large bowl, whisk together almond milk, eggs, maple syrup, melted butter, and applesauce.
- Add oats, baking powder, cinnamon, nutmeg, allspice, and salt. Stir until combined.
- Fold in chopped apples and optional nuts.
- Pour mixture into prepared baking dish.
- Bake for 35 minutes until set and golden brown.
- Cool for 5 minutes before serving.
- Serve warm with desired toppings.
Notes
- Use old-fashioned oats for best texture (not quick oats).
- For vegan version, use flax eggs and plant-based butter.
- Store leftovers in refrigerator for up to 7 days.
- Freeze individual portions for up to 3 months.
