Description
A tropical twist on classic baked brie featuring sweet pineapple, salty ham, and a brown sugar glaze – perfect for entertaining with Hawaiian flavors.

- 1 wheel of brie cheese
- 1 cup shredded coconut
- 1 cup chopped macadamia nuts
- 1 cup mango, diced
- 1 cup pineapple, diced
- 2 tablespoons honey
- 1 tablespoon lime juice
Instructions
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
- In bowl, mix pineapple, ham, brown sugar, rum (if using), ginger and pepper flakes.
- Unfold puff pastry and place brie in center. Top with pineapple-ham mixture.
- Wrap pastry around brie, trimming excess and sealing edges with egg wash.
- Flip wrapped brie seam-side down on baking sheet. Brush with egg wash (1 egg + 1 tbsp water).
- Bake 20-25 minutes until golden brown. Let rest 5 minutes.
- Garnish with macadamia nuts and toasted coconut before serving warm with crackers.
Notes
- For vegetarian version: omit ham and add 1/4 cup diced red bell pepper
- Can prepare filling up to 1 day ahead and refrigerate
- For extra caramelization: broil last 1-2 minutes (watch carefully)
- Leftovers (if any) make amazing grilled cheese sandwiches
