- 2 cups cooked ham, diced
- 4 cups potatoes, peeled and diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups ham broth (or chicken broth)
- Salt and pepper, to taste
- Optional: Fresh herbs for garnish (like thyme or parsley)
Instructions
- In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-5 minutes.
- Add diced carrots and diced celery, continuing to cook for another 5 minutes until they soften.
- Stir in the diced ham and peeled, diced potatoes, blending well with the aromatics.
- Add in the ham broth (or chicken broth) and bring the mixture to a vigorous boil.
- Once boiling, reduce the heat and let it simmer for 20-30 minutes, until the potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs.
Notes
Refrigerate leftovers in an airtight container for up to 3 days. Can also be frozen for up to 3 months.
