Description

A comforting bowl of ham and potato soup filled with tender potatoes, savory ham, and fresh vegetables, perfect for chilly evenings.


Ingredients

  • 2 cups cooked ham, diced
  • 4 cups potatoes, peeled and diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups ham broth (or chicken broth)
  • Salt and pepper, to taste
  • Optional: Fresh herbs for garnish (like thyme or parsley)

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-5 minutes.
  2. Add diced carrots and diced celery, continuing to cook for another 5 minutes until they soften.
  3. Stir in the diced ham and peeled, diced potatoes, blending well with the aromatics.
  4. Add in the ham broth (or chicken broth) and bring the mixture to a vigorous boil.
  5. Once boiling, reduce the heat and let it simmer for 20-30 minutes, until the potatoes are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh herbs.

Notes

Refrigerate leftovers in an airtight container for up to 3 days. Can also be frozen for up to 3 months.
