Ingredients

- 2 cups diced leftover ham
- 1 cup corn kernels
- 3 large potatoes, peeled and diced
- 4 slices of bacon, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Crisp the bacon in a large pot over medium heat until golden and crispy (5-7 minutes). Remove and set aside, leaving fat in the pot.
- Sauté the onions and garlic until translucent and fragrant (3-4 minutes).
- Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until tender (15-20 minutes).
- Stir in corn and diced ham, simmer for another 5 minutes.
- Pour in heavy cream and heat through without boiling (3-5 minutes).
- Season with salt and pepper to taste before serving.
Notes
This chowder is also perfect for meal prep and can be frozen for up to 3 months.
