Description

A comforting and creamy chowder filled with tender potatoes, sweet corn, and savory ham, perfect for chilly evenings.


Ingredients

  • 2 cups diced leftover ham
  • 1 cup corn kernels
  • 3 large potatoes, peeled and diced
  • 4 slices of bacon, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Crisp the bacon in a large pot over medium heat until golden and crispy (5-7 minutes). Remove and set aside, leaving fat in the pot.
  2. Sauté the onions and garlic until translucent and fragrant (3-4 minutes).
  3. Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until tender (15-20 minutes).
  4. Stir in corn and diced ham, simmer for another 5 minutes.
  5. Pour in heavy cream and heat through without boiling (3-5 minutes).
  6. Season with salt and pepper to taste before serving.

Notes

This chowder is also perfect for meal prep and can be frozen for up to 3 months.
