- 2 teaspoons olive oil
- 1 brown onion, diced
- 2 bunches broccolini, cut into 2 cm pieces
- 150g sliced ham, roughly chopped
- 6 large eggs
- 3/4 cup cottage cheese
- 2 teaspoons Dijon mustard
- 1 cup grated low-fat cheddar cheese
- Salt and black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Mix the eggs, cottage cheese, Dijon mustard, and a sprinkle of salt and black pepper together in a large mixing bowl.
- Sauté the diced brown onion in olive oil for about 2 minutes until soft.
- Add the chopped broccolini and cook for an additional 5 minutes.
- Incorporate the chopped ham into the mixture.
- Layer the egg mixture over the broccolini and ham, then top with grated cheddar cheese.
- Bake for 15 minutes or until the eggs are set and the top is golden brown.
- Cooling let it cool for a few minutes before slicing.
