Description

A hearty and flavorful frittata featuring vibrant broccolini and savory ham, perfect for brunch or light dinners.


Ingredients

  • 2 teaspoons olive oil
  • 1 brown onion, diced
  • 2 bunches broccolini, cut into 2 cm pieces
  • 150g sliced ham, roughly chopped
  • 6 large eggs
  • 3/4 cup cottage cheese
  • 2 teaspoons Dijon mustard
  • 1 cup grated low-fat cheddar cheese
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the eggs, cottage cheese, Dijon mustard, and a sprinkle of salt and black pepper together in a large mixing bowl.
  3. Sauté the diced brown onion in olive oil for about 2 minutes until soft.
  4. Add the chopped broccolini and cook for an additional 5 minutes.
  5. Incorporate the chopped ham into the mixture.
  6. Layer the egg mixture over the broccolini and ham, then top with grated cheddar cheese.
  7. Bake for 15 minutes or until the eggs are set and the top is golden brown.
  8. Cooling let it cool for a few minutes before slicing.

Notes

Serve warm or at room temperature. This frittata keeps well in the fridge for up to 4 days.
