Description

A wholesome and comforting ground turkey soup packed with tender turkey and vibrant veggies.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 cup onions, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 0.75 lb ground turkey
  • 4 garlic cloves, minced
  • 1.5 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp tomato paste
  • 6 cups low-sodium chicken broth
  • 1 cup crushed tomatoes
  • 2 cups potatoes, cut into chunks
  • 1 bay leaf
  • 1/4 tsp red pepper flakes
  • 1 cup green peas
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Prepare all vegetables: Dice onions, chop carrots and celery, mince garlic, and peel and cut potatoes.
  2. Heat olive oil in a large pot over medium heat.
  3. Sauté diced onions, carrots, and celery for about 5 minutes until soft.
  4. Add ground turkey, breaking it up and cooking for 3-4 minutes until browned.
  5. Stir in minced garlic and Italian seasoning, cooking for another 3-4 minutes.
  6. Add tomato paste and cook for 1-2 minutes.
  7. Pour in chicken broth and crushed tomatoes, add potato chunks and bay leaf, and bring to a gentle boil.
  8. Reduce heat to a simmer for 15-20 minutes until potatoes are fork-tender.
  9. Stir in green peas and cook for 1 minute. Remove bay leaf and adjust seasoning.
  10. Ladle soup into bowls and garnish with parsley.

Notes

Store leftovers in an airtight container; freezes for up to three months. Tastes even better the next day!
