A wholesome and comforting ground turkey soup packed with tender turkey and vibrant veggies.
Ingredients

- 2 tbsp olive oil
- 1 cup onions, diced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 0.75 lb ground turkey
- 4 garlic cloves, minced
- 1.5 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp tomato paste
- 6 cups low-sodium chicken broth
- 1 cup crushed tomatoes
- 2 cups potatoes, cut into chunks
- 1 bay leaf
- 1/4 tsp red pepper flakes
- 1 cup green peas
- 1 tbsp fresh parsley, chopped
Instructions
- Prepare all vegetables: Dice onions, chop carrots and celery, mince garlic, and peel and cut potatoes.
- Heat olive oil in a large pot over medium heat.
- Sauté diced onions, carrots, and celery for about 5 minutes until soft.
- Add ground turkey, breaking it up and cooking for 3-4 minutes until browned.
- Stir in minced garlic and Italian seasoning, cooking for another 3-4 minutes.
- Add tomato paste and cook for 1-2 minutes.
- Pour in chicken broth and crushed tomatoes, add potato chunks and bay leaf, and bring to a gentle boil.
- Reduce heat to a simmer for 15-20 minutes until potatoes are fork-tender.
- Stir in green peas and cook for 1 minute. Remove bay leaf and adjust seasoning.
- Ladle soup into bowls and garnish with parsley.
Notes
Store leftovers in an airtight container; freezes for up to three months. Tastes even better the next day!
