Description

Ingredients

– 1 tablespoon Olive Oil or Avocado Oil
– 1 pound Lean Ground Turkey (93/7)
– 1 medium Yellow Onion, finely chopped
– 2 cloves Garlic, minced
– 1 tablespoon Fresh Ginger, grated
– 8-ounce can Water Chestnuts, drained and finely chopped
– 2 Green Onions, thinly sliced, plus more for garnish
– 1/4 cup Hoisin Sauce
– 1/4 cup Low-Sodium Soy Sauce or Tamari
– 1 tablespoon Rice Vinegar
– 1 tablespoon Sesame Oil
– 1 teaspoon Sriracha or Chili Garlic Sauce (optional)
– 1-2 heads Butter Lettuce or Iceberg Lettuce


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add onion, garlic, and ginger, and sauté for 2-3 minutes until fragrant.
  2. Add ground turkey and cook, breaking it up with a spoon, until no longer pink, about 5-7 minutes.
  3. Add bell pepper and mushrooms, and cook for another 3-4 minutes until vegetables are tender.
  4. Stir in soy sauce, hoisin sauce, sesame oil, and rice vinegar. Cook for 1-2 minutes until well combined and heated through.
  5. Spoon the turkey mixture into lettuce cups.
  6. Garnish with green onions, cilantro, and sesame seeds if desired.
  7. Serve immediately.

Notes

  • For a spicier version, add a dash of sriracha or red pepper flakes.
  • Use ground chicken or tofu as a substitute for turkey.
  • Serve with extra hoisin or soy sauce on the side for dipping.
