Description

A comforting and versatile casserole combining lean ground turkey, crispy hashbrowns, and gooey cheese, perfect for breakfast or dinner.


Ingredients

  • 1.25 lbs ground turkey
  • 1.5 tbsp oil (olive or avocado)
  • 1 large onion, finely diced
  • 12 eggs
  • 1.5 tsp salt
  • 3/4 tsp pepper
  • 1.5 tsp Italian herbs
  • 1/2 tsp garlic powder
  • 16 oz frozen hash browns
  • 1.5 cups cheddar cheese

Instructions

  1. Preheat the oven to 350°F.
  2. Finely dice the onion into 1/4-inch pieces.
  3. In a large skillet, heat the oil and sauté the onions for about 2 minutes.
  4. Add ground turkey to the skillet with the Italian herbs and garlic powder; cook until browned, about 3-4 minutes.
  5. In a mixing bowl, whisk together eggs, salt, and pepper.
  6. In a greased 9×13 inch baking dish, layer the egg mixture, hashbrowns, cooked turkey, and onions, and then sprinkle with cheddar cheese.
  7. Bake for 35-45 minutes until the eggs are set and the top is golden brown. Broil for 2-3 minutes if desired for a crispy top.

Notes

Use room temperature eggs for fluffier results. This dish is freezer-friendly.
