- 1.25 lbs ground turkey
- 1.5 tbsp oil (olive or avocado)
- 1 large onion, finely diced
- 12 eggs
- 1.5 tsp salt
- 3/4 tsp pepper
- 1.5 tsp Italian herbs
- 1/2 tsp garlic powder
- 16 oz frozen hash browns
- 1.5 cups cheddar cheese
Instructions
- Preheat the oven to 350°F.
- Finely dice the onion into 1/4-inch pieces.
- In a large skillet, heat the oil and sauté the onions for about 2 minutes.
- Add ground turkey to the skillet with the Italian herbs and garlic powder; cook until browned, about 3-4 minutes.
- In a mixing bowl, whisk together eggs, salt, and pepper.
- In a greased 9×13 inch baking dish, layer the egg mixture, hashbrowns, cooked turkey, and onions, and then sprinkle with cheddar cheese.
- Bake for 35-45 minutes until the eggs are set and the top is golden brown. Broil for 2-3 minutes if desired for a crispy top.
Notes
Use room temperature eggs for fluffier results. This dish is freezer-friendly.
