Ingredients

  • 2 cups egg pasta
  • 1 lb ground turkey
  • 2 tablespoons olive oil
  • 1.5 tablespoons unsalted butter
  • 2 cups broccoli florets
  • 1 cup carrots, diced or grated
  • 0.5 cup yellow onion, diced
  • 1.5 tablespoons garlic, minced
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1.25 cups milk
  • 1 tablespoon Dijon mustard
  • 2 teaspoons thyme
  • 0.5 teaspoon smoked paprika
  • 1 cup cheddar cheese, grated
  • 0.5 cup sour cream
  • Salt and pepper, to taste
  • 0.33 cup panko breadcrumbs
  • 3 tablespoons Parmesan cheese, grated

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Cook the egg pasta in salted water for 2 minutes less than package directions, then drain and toss with 1 tablespoon olive oil.
  3. In a large skillet, heat the remaining olive oil over medium-high heat and brown the ground turkey for 5-7 minutes.
  4. Drain excess fat and transfer turkey to a bowl.
  5. Melt the butter in the same skillet, sauté onions, broccoli, and carrots for 2-3 minutes, then add minced garlic and sauté for an additional minute.
  6. Sprinkle flour over the sautéed vegetables, stir for 1 minute, then gradually pour in chicken broth and milk while whisking.
  7. Stir in Dijon mustard and thyme, bring to a gentle boil, then let it simmer for 5-7 minutes until thickened.
  8. Add cheddar cheese and sour cream to the sauce, stirring until creamy, then mix in the cooked turkey and pasta.
  9. Pour the mixture into the baking dish, then mix panko and Parmesan in a small bowl, drizzle with olive oil, and sprinkle over the top.
  10. Bake in the oven for 20-25 minutes until the top is golden brown and sauce is bubbling. Let cool for a few minutes before serving.

Notes

Aim to bring butter and milk to room temperature before using for a smoother sauce. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
