A hearty and comforting soup featuring ground turkey and wild rice, perfect for chilly evenings.

- 1 lb ground turkey
- 1 onion (finely diced into 1/4-inch pieces)
- 3 tbsp garlic
- 1 tbsp canola oil
- 2 tsp cumin
- 4 tbsp chili powder
- 1 tsp salt
- 1/4 tsp black pepper
- 28 oz crushed tomatoes
- 4 cups chicken broth
- 15 oz black beans (rinsed and drained)
- 2 cups corn
- 8 oz cream cheese (cubed and softened)
- 2.5 cups wild rice
- 1/2 cup cilantro (for garnish)
- Tortilla strips (for garnish)
Instructions
- Cook wild rice according to package directions (about 45-50 minutes) until tender.
- In a large pot, heat canola oil over medium-high heat. Add ground turkey and cook until no longer pink, about 6-8 minutes.
- Add the onion and cook until soft, around 3-4 minutes. Stir in garlic and sauté for an additional minute.
- Reduce heat to medium-low, add cumin, chili powder, and salt. Toast spices for about 1-2 minutes.
- Pour in crushed tomatoes, chicken broth, black beans, and corn. Bring to a simmer and let bubble for about 10-15 minutes.
- Fold in the cubed cream cheese until melted, then add the cooked wild rice and heat through for an additional 2-3 minutes.
- Stir in cilantro before serving and top with tortilla strips.
Notes
For a spicy kick, add diced jalapeños or cayenne pepper. Store leftovers in an airtight container in the fridge for 3-4 days.
