Description

A hearty and comforting soup featuring ground turkey and wild rice, perfect for chilly evenings.


Ingredients

  • 1 lb ground turkey
  • 1 onion (finely diced into 1/4-inch pieces)
  • 3 tbsp garlic
  • 1 tbsp canola oil
  • 2 tsp cumin
  • 4 tbsp chili powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 28 oz crushed tomatoes
  • 4 cups chicken broth
  • 15 oz black beans (rinsed and drained)
  • 2 cups corn
  • 8 oz cream cheese (cubed and softened)
  • 2.5 cups wild rice
  • 1/2 cup cilantro (for garnish)
  • Tortilla strips (for garnish)

Instructions

  1. Cook wild rice according to package directions (about 45-50 minutes) until tender.
  2. In a large pot, heat canola oil over medium-high heat. Add ground turkey and cook until no longer pink, about 6-8 minutes.
  3. Add the onion and cook until soft, around 3-4 minutes. Stir in garlic and sauté for an additional minute.
  4. Reduce heat to medium-low, add cumin, chili powder, and salt. Toast spices for about 1-2 minutes.
  5. Pour in crushed tomatoes, chicken broth, black beans, and corn. Bring to a simmer and let bubble for about 10-15 minutes.
  6. Fold in the cubed cream cheese until melted, then add the cooked wild rice and heat through for an additional 2-3 minutes.
  7. Stir in cilantro before serving and top with tortilla strips.

Notes

For a spicy kick, add diced jalapeños or cayenne pepper. Store leftovers in an airtight container in the fridge for 3-4 days.
