- 1 lb lean ground beef
- 2 medium sweet potatoes, peeled and diced
- 1 avocado, sliced
- 1 cup cottage cheese
- 1 yellow onion, diced
- 2 tablespoons olive oil
- 1 packet taco seasoning (2 tablespoons)
- 2 tablespoons hot honey
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper.
- Roast sweet potatoes 40-45 minutes until tender and caramelized.
- Heat remaining oil in skillet. Sauté onion 4-5 minutes until soft.
- Add ground beef and taco seasoning. Cook 8-10 minutes until browned.
- Divide roasted sweet potatoes among bowls.
- Top with ground beef mixture, avocado slices, and cottage cheese.
- Drizzle with hot honey before serving.

- For spicier version, add extra hot honey or chili flakes.
