Description

Hearty and flavorful enchiladas filled with seasoned ground beef and cheese, smothered in enchilada sauce and baked to perfection for the ultimate comfort food experience.


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Sour cream for serving

Instructions

  1. Preheat oven to 375°F (190°C)
  2. Brown ground beef with diced onions in skillet
  3. Add minced garlic, cumin, and chili powder, sauté 1 minute
  4. Warm tortillas to make pliable
  5. Spoon beef mixture onto tortillas, roll tightly
  6. Place seam-side down in greased baking dish
  7. Pour enchilada sauce over rolled tortillas
  8. Sprinkle cheese generously on top
  9. Bake 20-25 minutes until bubbly and golden
  10. Serve with sour cream
