- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup whipped cream
- Green food coloring
- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- Mini chocolate chips (for decoration)
- Red candy hearts (for decoration)
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter until it resembles wet sand. Press firmly into mini cheesecake pans.
- In another bowl, beat cream cheese, sugar, and vanilla extract until creamy.
- Mix in sour cream and green food coloring until smooth.
- Gently fold in whipped cream until well mixed.
- Spoon the mixture over the prepared crusts, filling them 2/3 full.
- Bake for about 15-20 minutes until edges are firm and centers slightly jiggle.
- Turn off the oven, leave the door ajar for 10 minutes, then cool on the counter before transferring to the fridge.
- Once cool, decorate with mini chocolate chips and red candy hearts.
- Chill in the fridge for at least 2 hours before serving.

For best results, ensure all dairy ingredients are at room temperature. Store leftovers in an airtight container in the fridge for up to 5 days.
