Description

Delightfully creamy mini cheesecakes capturing the whimsical spirit of the Grinch, perfect for holiday celebrations.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup whipped cream
  • Green food coloring
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • Mini chocolate chips (for decoration)
  • Red candy hearts (for decoration)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until it resembles wet sand. Press firmly into mini cheesecake pans.
  3. In another bowl, beat cream cheese, sugar, and vanilla extract until creamy.
  4. Mix in sour cream and green food coloring until smooth.
  5. Gently fold in whipped cream until well mixed.
  6. Spoon the mixture over the prepared crusts, filling them 2/3 full.
  7. Bake for about 15-20 minutes until edges are firm and centers slightly jiggle.
  8. Turn off the oven, leave the door ajar for 10 minutes, then cool on the counter before transferring to the fridge.
  9. Once cool, decorate with mini chocolate chips and red candy hearts.
  10. Chill in the fridge for at least 2 hours before serving.

Notes

For best results, ensure all dairy ingredients are at room temperature. Store leftovers in an airtight container in the fridge for up to 5 days.
