Ingredients

  • 1 pound boneless skinless chicken thighs (or breasts)
  • 23 green onions, chopped (optional for garnish)
  • 1 ½ tablespoons lime juice (about 1 small lime)
  • 1 ½ tablespoons neutral oil (vegetable, canola, or olive oil)
  • 2 tablespoons soy sauce (low sodium is fine)
  • ½ tablespoon fish sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons minced garlic (about 2 cloves)
  • 1 teaspoon grated fresh ginger
  • ¼ teaspoon red chili flakes
  • 1 tablespoon chopped cilantro (plus more for garnish)

Instructions

  1. Prep the Chicken: Trim any large pieces of fat from the chicken. Pound each piece between two sheets of plastic wrap to an even thickness (about ½ inch).
  2. Make the Marinade: In a ziplock bag or medium mixing bowl, whisk together lime juice, oil, soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, red chili flakes, and chopped cilantro until well combined.
  3. Marinate: Add the chicken thighs to the marinade, seal the bag or cover the bowl, and toss to coat. Refrigerate for at least 30 minutes or overnight for best flavor.
  4. Preheat Grill: Preheat your grill to medium-high heat (about 400°F) and oil the grates with a paper towel soaked in oil.
  5. Grill the Chicken: Remove chicken from the marinade, allowing excess to drip off. Grill for about 3–5 minutes per side until nicely charred and the internal temperature reaches 160°F.
  6. Garnish and Serve: Let the chicken rest for 5 minutes. Garnish with chopped green onions and cilantro before serving.

Notes

For a deeper flavor, marinate the chicken overnight. You can also use a grill pan or bake in the oven if needed.
