- 1 loaf Baguette
- 4 cloves Garlic
- 4 tbsp Extra Virgin Olive Oil
- 1 tbsp Balsamic Vinegar
- 200 g Cherry Tomatoes
- 2 tbsp Fresh Basil Leaves, chopped
- 1 tsp Sea Salt
- 1/2 tsp Freshly Ground Black Pepper
Instructions
- Preheat your grill or grill pan to medium-high heat.
- Slice the baguette diagonally into ½-inch thick slices.
- Create the garlic-oil mixture by whisking garlic, olive oil, balsamic vinegar, salt, and pepper together in a small bowl.
- Brush both sides of bread slices with half of the garlic-oil mixture.
- Grill the bread slices for 1-2 minutes per side until golden.
- Prepare the topping by halving cherry tomatoes and mixing them with the remaining garlic-oil mixture and basil.
- Rub grilled bread slices with a fresh garlic clove for extra flavor.
- Assemble each slice of bread with the tomato and basil mixture.
- Serve the bruschetta warm or at room temperature.

Best enjoyed fresh. Leftover toppings can last up to 2 days in the fridge.
