Description

A delicious and vibrant bowl combining grilled steak, zucchini, and bell peppers on a bed of fluffy rice, simple yet full of flavor.


Ingredients

  • 1 lb steak (sirloin or ribeye)
  • 2 medium zucchinis, sliced
  • 1 cup cooked rice (brown or white)
  • 1 bell pepper, sliced
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the steak with olive oil, salt, pepper, and garlic powder. Let it sit for 10 minutes.
  3. Grill the steak for 5-7 minutes per side for medium-rare. Let it rest for 5 minutes before slicing.
  4. Prepare the vegetables by tossing zucchini and bell pepper in olive oil, salt, and pepper; grill for 3-4 minutes.
  5. Assemble your bowls with rice, sliced steak, grilled vegetables, and avocado.
  6. Garnish with fresh cilantro and serve warm.

Notes

If you can’t find zucchini, summer squash or asparagus can be substituted. For fresh cilantro, basil or parsley work well too.
