A vibrant salsa combining smoky grilled pineapple with fresh veggies and lime for a sweet and spicy twist that enhances any dish.
Ingredients

- 1/2 whole pineapple, sliced into 1-inch thick rings
- 1/2 cup red bell pepper, seeded and diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 jalapeño pepper, seeded and minced
- Juice of 1 large lime, freshly squeezed
- 1 teaspoon ground cumin
- Salt to taste
Instructions
- Preheat the grill to medium-high and lightly oil it.
- Grill pineapple rings for 4-5 minutes on each side until marked and softened.
- Cool the grilled pineapple in the refrigerator.
- Chop the cooled pineapple into 1/4 inch pieces, discarding the core and peel.
- In a medium bowl, mix the pineapple, red bell pepper, red onion, cilantro, jalapeño, lime juice, and cumin.
- Season with salt to taste and serve, optionally allow to sit for an hour to meld flavors.
Notes
Allowing the salsa to sit for an hour enhances the flavors. Best served fresh but can be stored in an airtight container for up to three days.
