Description
A bold and easy recipe that combines grilled chicken marinated in honey mustard with vibrant peaches and greens, all ready in just 30 minutes.

- 1 ½ lbs boneless, skinless chicken breasts
- ¼ cup Dijon mustard
- 3 tbsp honey
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- ½ tsp garlic powder
- Salt and pepper, to taste
- 4 ripe peaches, sliced
- 5 cups mixed greens
- ¼ cup red onion, thinly sliced
- ⅓ cup crumbled feta or goat cheese
- ¼ cup chopped pecans or walnuts (optional)
Instructions
- In a bowl, whisk together the Dijon mustard, honey, olive oil, apple cider vinegar, garlic powder, salt, and pepper. Reserve 3 tablespoons for dressing the salad.
- Pour the remaining marinade over the chicken and marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for 5-6 minutes per side, until cooked through. Allow to rest before slicing.
- Grill the peach slices for 1-2 minutes per side until warmed.
- In a salad bowl, toss together mixed greens, grilled peaches, red onion, feta, and nuts. Top with sliced chicken and drizzle with reserved dressing.
- Serve immediately.
Notes
Marinate the chicken for up to 4 hours for the best flavor. Leftovers can be stored in the fridge for up to 3 days.
