Description

A bold and easy recipe that combines grilled chicken marinated in honey mustard with vibrant peaches and greens, all ready in just 30 minutes.


Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts
  • ¼ cup Dijon mustard
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • ½ tsp garlic powder
  • Salt and pepper, to taste
  • 4 ripe peaches, sliced
  • 5 cups mixed greens
  • ¼ cup red onion, thinly sliced
  • ⅓ cup crumbled feta or goat cheese
  • ¼ cup chopped pecans or walnuts (optional)

Instructions

  1. In a bowl, whisk together the Dijon mustard, honey, olive oil, apple cider vinegar, garlic powder, salt, and pepper. Reserve 3 tablespoons for dressing the salad.
  2. Pour the remaining marinade over the chicken and marinate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 5-6 minutes per side, until cooked through. Allow to rest before slicing.
  5. Grill the peach slices for 1-2 minutes per side until warmed.
  6. In a salad bowl, toss together mixed greens, grilled peaches, red onion, feta, and nuts. Top with sliced chicken and drizzle with reserved dressing.
  7. Serve immediately.

Notes

Marinate the chicken for up to 4 hours for the best flavor. Leftovers can be stored in the fridge for up to 3 days.
