Ingredients

  • 1/3 cup barbecue sauce
  • 3 tbsp pineapple juice
  • 1.5 tbsp soy sauce
  • 1 garlic clove, minced
  • 1 tsp ginger, minced
  • 1/2 tsp Sriracha (optional)
  • 1 cup pineapple, sliced
  • 4 reduced-calorie hamburger rolls
  • 1 red onion, sliced
  • 1 jalapeño, sliced
  • 2 cups greens (baby spinach or arugula)

Instructions

  1. Prepare the Marinade: In a bowl, mix together barbecue sauce, pineapple juice, soy sauce, minced garlic, minced ginger, and Sriracha.
  2. Marinate the Chicken: Place chicken breasts into the marinade, ensuring every piece is coated. Cover and refrigerate.
  3. Preheat your grill to medium-high heat, around 375°F (190°C).
  4. Grill the Chicken: Remove chicken from the marinade, letting excess drip off. Grill for 4-5 minutes per side or until internal temperature reaches 165°F (75°C).
  5. Prepare the Pineapple: Spray sliced pineapple with cooking spray and grill for about 3-4 minutes per side until caramelized.
  6. Reduce the Marinade: Pour any leftover marinade into a saucepan, bring to a boil, and simmer for 4-5 minutes until slightly reduced.
  7. Assemble the Sandwiches: Layer grilled chicken on toasted rolls, top with grilled pineapple, sliced onion, jalapeño, and greens. Drizzle with reduced marinade.
  8. Serve warm with your favorite side dishes.

Notes

For optimal flavor, marinate the chicken overnight. Store leftovers in the fridge for up to 3 days.
