- 1 cup pineapple, sliced
- 4 reduced-calorie hamburger rolls
- 1 red onion, sliced
- 1 jalapeño, sliced
- 2 cups greens (baby spinach or arugula)
Instructions
- Prepare the Marinade: In a bowl, mix together barbecue sauce, pineapple juice, soy sauce, minced garlic, minced ginger, and Sriracha.
- Marinate the Chicken: Place chicken breasts into the marinade, ensuring every piece is coated. Cover and refrigerate.
- Preheat your grill to medium-high heat, around 375°F (190°C).
- Grill the Chicken: Remove chicken from the marinade, letting excess drip off. Grill for 4-5 minutes per side or until internal temperature reaches 165°F (75°C).
- Prepare the Pineapple: Spray sliced pineapple with cooking spray and grill for about 3-4 minutes per side until caramelized.
- Reduce the Marinade: Pour any leftover marinade into a saucepan, bring to a boil, and simmer for 4-5 minutes until slightly reduced.
- Assemble the Sandwiches: Layer grilled chicken on toasted rolls, top with grilled pineapple, sliced onion, jalapeño, and greens. Drizzle with reduced marinade.
- Serve warm with your favorite side dishes.
