Description

A delightful mix of grilled halloumi and roasted veggies, dressed with a tangy lemon vinaigrette for a burst of flavors.


Ingredients

  • 250g Halloumi cheese
  • 1 Red bell pepper, chopped
  • 1 Yellow bell pepper, chopped
  • 1 Zucchini, chopped
  • 1 Red onion, chopped
  • 2 tablespoons high-quality olive oil
  • Juice of 1 lemon
  • 2 tablespoons chopped fresh basil or parsley

Instructions

  1. Prep Your Veggies: Wash and chop mixed vegetables into bite-sized pieces. Toss them with olive oil, salt, and pepper.
  2. Preheat Oven: Preheat oven to 400°F (200°C).
  3. Roast Vegetables: Spread veggies on a baking sheet lined with parchment paper; roast for 20-25 minutes until tender and caramelized.
  4. Prepare Halloumi: Slice halloumi into 1/2 inch pieces. Heat a grill pan or outdoor grill over medium heat.
  5. Grill Halloumi: Grill each side for 2-3 minutes until golden brown and crispy.
  6. Make Lemon Dressing: Whisk together lemon juice, a splash of olive oil, and chopped herbs in a small bowl; season with salt and pepper.
  7. Combine Everything: Arrange roasted veggies on a platter, place grilled halloumi on top, and drizzle with lemon dressing.
