Ingredients

  • 1.33 lbs 99% lean ground turkey (or beef or chicken)
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2/3 cup salsa verde (mild or spicy, plus extra for serving)
  • Warmed corn tortillas
  • Toppings of your choice (like avocado, cilantro, radishes, or crema)

Instructions

  1. Heat the oil: In a large skillet, heat 2 teaspoons of olive oil over medium-high heat until it shimmers.
  2. Sauté aromatics: Add the diced onion and minced garlic. Sauté for about 4-5 minutes until tender and golden.
  3. Cook the turkey: Add the ground turkey, cumin, salt, and pepper. Cook for 6-7 minutes, breaking it up until browned and cooked through.
  4. Add salsa verde: Stir in 2/3 cup of salsa verde and let it simmer for at least 5 minutes.
  5. Prepare tacos: Warm the corn tortillas in a dry skillet or over an open flame for a minute on each side.
  6. Assemble and serve: Spoon the turkey mixture into the tortillas, topping with garnishes and extra salsa verde on the side.

Notes

For extra moisture, add chicken broth or more salsa verde if needed. Store leftovers in an airtight container for up to 3 days, or freeze for 2 months.
